Mattie Loving's Pound Cake

Ingredients

Instructions

  • 1 cup unsalted butter

  • 8 oz cream cheese softened

  • 3 cups granulated sugar

  • 6 large eggs (lightly beaten)

  • 1 Tablespoon vinilla extract

  • 3 cups All-purpose flour

  • 1/4 teaspoon baking soda

  • 1 teaspoon salt

  1. Preheat oven to 300°F and thoroughly grease and flower a bundt cake pan.  Tap out excess flour

  2. In large mixing bole combine butter cream cheese and use an electric mixer (or stand mixer) to b beat on high speed until smooth and creamy.

  3. Scrape sides and bottom of bowl to make sure all ingreadints are well mixed.  Add sugar and mix again.  Mix on high until light and fluffy

  4. With the mixer on high speed, add one egg at a time until thoroughly mixed in (about 30 second) Repeat untill all eggs are incorperated

  5. Add vanilla extract 

  6.   In a separate medium sized mixing bowl whisk together flour, baking soda, and table salt.  slowly add to wet ingredients until smooth light & silky

  7. Pour into prepared bundt pan and bake in 300°F oven for 1hour 35 minutes.  When done the cake will be golden brown and a toothpick inserted will come out clean

  8. Allow cake to cool in pan for 10-15 minutes before emptying onto a wire rack

  9. Allow to cool completely before serving.  If you want to be fancy top with powedered sugar, whipped cream, or fresh berries.
